Craig’s Notes

I made a Nicoise Salad with Brunoise of each of the ingredients and then combined with Mayonnaise – the Egg. I then garnished the plate with Olives, Tomates, Green Beans, the Mackerel and a Poached Egg.

Really love the simplicity of this dish. The Tomato and Onions stewed with Olive Oil is delicious. Baked the Haddock in the oven and served with Sweet Potato Chips. Cripsy Onions to finish. (I did make a roast Courgette Puree. I won’t be making another one and I did not put in on the plate.)

Simple and delicious. Warm and tangy Berries with creamy Whiskey, Oat and Honey Parfait. Yum! Yum!
