Craig’s Notes

Everytime I do this starter it becomes better and better, which makes sense I suppose. Thinly slices Granny Smith Apple, topped Bramley Apple Puree, with Apple Brunoise, Toasted Walnuts and Pumkin Seeds, with Soured Cream, Dressing and Walnut Oil. Sliced Goat’s Cheese on Griddled Crouton and grilled until brown.

Mixed Dried and Fresh Herb Stuffing, in the Guinean Fowl Breast, wrapped in Pancetta and roasted. Served with Asparagus and Pommes Noisette. Quite lovely.

I love this Parfait. Used Toasted Oats and Oatmeal this time. Much better. Served with the compote and a Honey and Oat Cake.
