Craig’s Notes

This is always a lovely starter. Individual tarts filled with Onions and Peppers in a Parmesan, Egg and Cream filling with Courgette and Tomato top. Pesto Mayonnaise, Pesto, Dressing and charred Gem Lettuce.

The Lamb was beautiful as before but I undercooked it slightly and had to correct. Needs sealing well and then 16 minutes in the oven plus 5 minutes rest. Excellent Boulanger: browned the onions and had them cooking all day until the stock reduced down. Simple minted vegetables and a Red Wine and Garlic Sauce.

I added the sugar to the Panna Cotta this time. Hurray! Served with Coconut Macaroons, Apple Puree, diced Apple and Cheesecake Cream.
