Craig’s Notes

Wow! Finally (on my secnd attempt) I made some really nice Ravioli. Last time was a disaster. These were great. Nice and thin, great sauce(s) and lovely garnish. I stuffed them with Cream Cheese, Feta and Parmesan with Leeks. Onions, Basil and Garlic seasoned heavily with Pepper and a bit of Salt. Added some Tomatoe Concasse and a few Breadcrumbs too. Stewed some Cherry Tomatoes with Garlic and Olive Oil and served with a Leek Butter Sauce, crispy Basil Leaves and Crispy Leeks.

Beautiful Trout on a bed of Fennel and Carrots, with Pomme Amandine (I think that’s what they are called – Pommes Croquettes with Ground Almonds), Creamed Peas and a Caper Sauce.

Simple and yet wonderful Breand and Butter Pudding made with Brioche, Butter and Custard topped with Demerara Sugar. Served with sauteed Bananas in Rum.
