Grilled Halloumi with Tomatoes, Sweet Peppers & Shallots

Oven Roast Breast of Duck with Blackcurrant and Cassis Sauce

Olive Oil Cake with Lemon Sauce and Lemon Curd Ice-cream

 (√Dairy, √Egg, √Gluten, √Vegetarian)

Marinated the cheese with Olive Oil, Black Pepper, dried Oregano and Sesame Seeds. Grilled and served with roast Tomato filled with Oven and Sun Dried Tomatoes, char-grilled Sweet Peppers, Dressing, pickled Shallots and Black Sesame Seeds.

Pan-fried and finished the Duck in the oven. Served with Red Cabbage, Pommes Fondant and a charred Carrot. Sauce was made from Stock, Onion, Celery, Thyme and Rosemary with Redcurrent Jelly and Port added to a reduction of Cassis with Berry Puree and finished with Demi.

Brilliant Olive Oil Cake served with bitter Lemon Sauce and Lemon Curd Icr-cream.
