Craig’s Notes

Very nice starter. Mashed Potato, Crab and Poached Salmon with sauteed Onions and Garlic. Shaped into small balls. Pane and deep fry. Served with leaves and a Fennel and Carrot Salad which I left to soften in Salt, Sugar and White Wine Vinegar. Nice bit of spice to the Mayonaisse too.

Second run at the trout and I was even more pleased with it this time. It is a Gordon Ramsey Recipe from BBC Good Food but for Sea Trout. The Potatoes and Chorizo are lovely together and the raw Pork flavour you can get sometimes from Chorizo is not present. I served it with a Pea Puree to compliment the dish. Very nice.

Favourite Dessert from RAB. I made them individually for a more refined result. Double up on the Lemons too. Turned out really well.
