Craig’s Notes

I was really impressed with this starter. Individualy tarts look very elegant. Bacon, Onions and Leek sauteed in butter and then the RAB Basic Tart Mixture. I used Black Pepper Pastry, baked blind, added the haddock pieces and then the filling. Bit of Cheddar on top and cooked in the oven. Served just warm with a little ‘goujon’ of Haddock and a crispy Bacon Tail with deep fried Leek salad.

I love Steak and Fries (not chips! – trust me I know the difference). I served with stuffed mushrooms and a rich and fiery Pepper Sauce.

I was very pleased with how this turned out. Simple Parfait mixture with a Banana and Dark Rum puree added to it and froze on a biscuit base. Excellent Shortbread and Caramel Sauce with Rum.
