Craig’s Notes

The Goats cheese is really top quality. Make sure it is grilled with the rind on. Place on a crouton. Made a Waldorf Salad with Mayonnaise. Should have just used Soured Cream as in the past. Sugar Snap Julienne and Bramley Apple Puree.

Recipe derived from RAB V2 Page 27. Pan-fried the Sea Bass and on a bed of Caramlised Onions and Sweet Peppers on a light Pastry Circle intoo which I added Parsley. Thinly Sliced Potatoe Cake and a Caper and Gherkin Dressing with Tarragon Oil. Really very nice.

Recipe derived from RAB V2 Page 170. Lots to do with this cake. Think I knocked too much air out when folding on the Mergingue. Still it was very nice and very rich. Lots of Chocolate, Whiskey and Coffee. Cheesecake Cream was perfect accompaniament.
