Craig’s Notes

Smoked Mackerel with Butter, Cream and Horseraddish blended until smooth and then spooned into a small ramekin and set in the fridge. Cucumber and Raddish Salad with Dressing and Melba Toast. Leave out of the fridge for 30 minutes prior to serving to soften the Butter.

Very please with this dish. Wrapped the Pork Fillet in Pancetta, sealed in a pan and finished in the oven. Serverd with Pommes Noisette, Pomme Croquette and steamed Cabbage. Served the Pork with a little cold Apple Sauce along with sauce Soubise with Hebridean Blue Cheese. Very, very nice.

Got the proportions right on this. 2 Egg Genoise and half of the cream cheese filled a large Tart mould perfectly. Cooked until just set and served with Blueberries and Sugar just warmed in a pan and left to bleed.
