Slow-fried the Smoked Trout in Butter and served with cooked Beetroot glazed with Balsamic, raw Beetroot through the spiraliser and Horseradish Mayonnaise, Chives and Radish.
Pan-fried the Sea Bass, basted with Lemon Butter and served on Pastry with Caramelised Onions, charred and sautéed Peppers, Pommes Sauté and a simple Shallot and Caper Dressing.
Sweet Vanilla Pastry case with very Lemony Lemon Curd, topped with Meringue, baked slowly to cook and then flashed to brown.
