Wrapped the Prawns in Pancetta, brushed with Butter, Seasoned and then grilled. Served on small thin Croutons, topped with Chorizo finished with a Pea Puree and a Shallot, Chorizo and Pea Dressing. Needs some Lemon!
Stuffed the Guinea Fowl with a Black Pudding Farce and made a Boudin out of the remainder. Roast the Guinea Fowl with the par-cooked Potatoes and served with braised Red Cabbage, Parsnip, Parsnip and Potato Puree, roast Potatoes and Asparagus.
Sweet Paste and Vanilla Pastry case with a Jam Glaze, macerated Raspberries and then covered with Rice Pudding. Served with Raspberry Sauce.
