Very good receipe. Twice baked really just means you can cook it prior to serving, allow it to collapse and then re-heat it later with a little bit of rise. Very nice though. Do the Parmesan glaze. Served with a simple salad and Chive Oil.
Recipe derived from RAB V1 Page 44. The dish was originally for Mackeral but this worked really well with Haddock. Simple Stewed Tomatoes and Onions were delicious. I did not add the Pesto to the Tomatoes but brushed it onto the plate. Looked nice did not spoi, the Tomotoes. Served with a small Potato Cake and the deep fried Onions.
Recipe derived from RAB V2 Page 150. There is quite a lot to do in this dish including rehydrating the Apricots, Pastry, Frangipane. Even thought the receipe did not call for the pastry case to be baked blind, I did and it was still undercooked. Need to blink bake longer and glaze with Egg White before applying the Jam or Honey to the base. Served with the best Vanilla Ice Cream I have ever tasted and the easiest recipe. RAB V2.
