Falafel were very nice served with mixed leaves from the polytunnel, fresh mint from the garden and fresh coriander too. Lime Gel, Chilli Sauce and Mint Sauce all a success. Need to work on the presentation.
Very happy with the Sea Bass and the way it worked especially the crispy Skin and Pommes Anna. Served with Onion Rings, Onion and Chive Puree, Shallot, Caper and Pepper Dressing, Charred Peppers and pastry case which was too big.
The Cranachan Parfait needed longer in the freezer and needed to be served on a bigger plate. Served with toasted Oats, Oat Biscuit Base, Meringues, Raspberry Powder, Berry Puree and Whisky Gel.
