Seared Black Peppered Salmon with Cucumber Pickle

Fillet of Haddock with Stewed Tomatoes, Pesto & Crispy Onions

Bramley Apple Crumble with Custard

 (√Dairy, √Gluten, √Vegetarian)

Cured the Salmon in equal quantities of toasted Black Pepper, Sugar and Salt. Seared in a very hot pan and served with Cucumber Salad, Cucumber Relish, Cucumber Balls, Radish, Leaves, Fennel, Dressing and Black Sesame.

Very pleased with the Haddock. Stewed the Onions and Tomatoes and added a little juice from tinned Plum Tomatoes. Seasoned. Served with Pommes Sautee, Broccoli with Black Onions Seeds, Pesto thinned with Basil Oil and toasted Pine Nuts.

Bramley Apple Puree with Crunchy Crumble and Custard which is hot, sweet and loaded with Vanilla.
