Craig’s Notes

Starter was nice but needs to be on White Bread. I used a really heavy wholemeal and it did not really work. Garnished with Pesto.

Guinea Fowl was very nice. Made a forcemeat from trimmings, mushrooms and onions. Stuffed the breast and wrapped in Pancetta. The Red Onions and the Puree were nice but served too much puree. Less is more!

Cheesecake is great but I had too much sponge! Too much cake and not enough Cheese.
