Craig’s Notes

Second time I have done this dish and improved it with the Lemon Butter and used Pancetta instead of Bacon. Powdered this and used as a garnish along with Minted Pea puree, sauteed Peas and Mint Oil. Very nice.

What another wonderfully old fashioned sauce. It was delicious. Shallot, Garlic and Mushrooms sauteed slowly until cooked, flamed with Brandy, French Mustard, Stock and finished with Cream and Butter. Served with Asparagus and spicy Skin-on Wedges.

Loveley Panna Cotta just set with Warm Berries and a Gluten Free and delicious Almond Biscuit.
