Smoked Mackerel with Panzanella

Pan-fried Sea Bass with Caramelised Onions & Sweet Peppers

Lemon Meringue Pie with Lemon Curd Ice Cream

 (√Dairy, √Eggs, √Gluten, √Vegetarian)

Chopped the Tomatoes in a large bowl, added Sun Dried and Oven Dried too. Tore bread and crisped in the oven for 5 minutes. 15 minutes before service added Olive Oil, Red Wine Vinegar, Salt and Pepper to the Tomatoes. Fried the Bread in lots of Butter until crispy and hot. After 10 minuted added to the Tomato mix and tossed gently with the Basil Leaves. Served on a plate with the Smoked Mackerel on top and Basil Oil.

Caramelise the Onions and sauté the Peppers separately. Served with Pommes Anna circle, Pasty, Black Pepper Onion Rings and Shallot and Caper Dressing.

Lemon Meringue Pie made with lots of Lemon, Lemon Sauce and Lemon Curd Ice-cream. Delightful!
