Skewered the Prawns with the Pancetta, brushed with Butter and grilled until cooked. Served with Pea Veloute, Butter fried Croutons and Chorizo. Finished with pickled Lemon and Tarragon Puree.

Coated the Pork Fillet in a Herb Crumb and roast in the oven. Served with roast Apple, Apple Puree, Potato and Leek Puree, Pommes Parisienne, Carrots and Asparagus. Served with a Cognac, Mustard and Cream Sauce.

Venetian Olive Oil Cake flavoured with lots of Orange, with warm Orange sauce, Marmalade Ice Cream and fresh Orange.
