Served the Poached Egg with dressed Leaves, Radish, Pancetta with Maple, Black Pudding, crispy Roast Potatoes, Red Wine Sauce and Black Pudding Ball.

Slow poached the Salmon seasoned with Fennel and Coriander Seed in Olive Oil and served with crispy salted Skin, pickled Onions, shiffonade of Savoy Cabbage, Pearl Barley Risotto with Cream Cheese and Parmesan, stuffed Cabbage Leaf, Beetroot, Brocolli, grilled Fennel, Dill Puree and Pickled Lemons. Creme Fraiche, Yoghurt, Cream and Lemon Dressing.

Rice Pudding Tart with Raspberries, Chantilly Cream and Raspberry Sauce.
