Skewered the Prawns with Pancetta, brushed with Butter and seasoned and grilled. Served with Pea Veloute, Peas, Pancetta, Pea Shoots, Pickled Lemon and Chorizo.

Slow roast Port Fillet with charred Apple, Apple Puree, Pommes Parisienne, Cauliflower Puree, 3 Cheese Mash, Asparagus, Carrots and Cognac and Mustard Sauce. Dipped the cooked Pork Fillet into freshly chopped Parsley, Sage and Chives.

Orange Venetian Olive Oil Cake with warm Orange Syrup, charred Orange and Marmalade and Whisky Ice cream.
