Chicken with Sweetcorn

Poached Pear, Eaton Mess, Almonds

Sautéed the Mushrooms, added Butter added crispy croutons made from Walnut and Sultana Bread and just before serving added the Apple Juice Poached Segments to warm through. Served with Apple Puree, Apple Gel, toasted Walnuts, Pickled Walnut Puree and finished with Cidre Creme Fraiche dressing.

Served the pan fried Chicken Breast with Breadcrumbed Chicken Fillet, Pommes Puree, Pommes Parmentier, roast Cauliflower, Sweetcorn a la Francaise, charred Sweetcorn and Sweetcorn Puree and finished with Red Wine and Red Wine Vinegar Sauce.

Poached Pear with Chantilly Cream, Meringues, Berries, Raspberry Sauce and Berry Puree.
