Craig’s Notes

Rich Chilli and Tomato Sauce with Crab and Lemon. Very nice. Added Basil and Parsley as per the recipe but finished with Tarragon Oil and Parmesan.

Trimmed, seasoned and sealed Pork Fillet brushed with Dijon Mustard and coated with a fresh herb crust. The problem is they always fall away. Still – tatsed nice. Served with Pommes Anna and steam Brocolli. The Wholegrain Mustard Sauce was a nice contrast to the dish.

Nice Chocolate Mousse with toasted Almond nibs and flakes – next time leave out the Amaretto. Good biscuits.
