Fillet of Smoked Scottish Trout with Beetroot & Creamed Horseradish

Pan-fried Sea Bass with Caramelised Onions & Sweet Peppers

Lemon Meringue Pie with Lemon Curd Ice Cream

 (√Dairy, √Eggs, √Gluten, √Vegetarian)

Pin boned and skinned the Trout. Cooked very slowly in clarified Butter. Served with sliced Beetroot, Leaves, Fennel, Red Onion, Pickled Beetroot and Horseradish Mayonnaise.

Served the pan-fried Sea Bass with Pastry Case (forgot to glaze but better size), topped with Caramelise Onions, Sweet Peppers and then Pommes Anna, Broccoli and then the fish. Served with Shallot and Chive Dressing and crispy Onion Rings.
