Pan-fried Fillet of Scottish Trout with Chorizo Fricassee & Peas

Dark Chocolate Cappuccino Mousse with Chocolate Brownie

Much better today. Cut the tail off the Bacon and cooked until flat and crispy in the oven. Slow fried the lardons in butter and then added small pieces of Black Pudding. Cooked until lovely but not overcooked. Served the Potatoes on the bottom, Bacon, Black Pudding and then the tail on top. few dressed Leaves, Red Wine Sauce and Egg.

Did Asparagus and Poached Egg for Guests with Dietary requirements

Crispy fried the Chorizo, added Potato and Smoked Paprika, Veg Stock and Peas. Served with Pea Puree, pan-fried Trout and Chorizo and Pea Fritters and Red Wine Dressing.

Cappuccino Mousse with Chocolate Brownies. Very nice. Made the Mousses smaller at Tasha’s suggestion. They were all eaten this time so she was right.
