Tart Tatin

Served the grilled and marinated Halloumi with Tomato concasse, oven and sun dried Tomatoes, Basil, Croutons, pickled Shallot, dressing and Basil puree.

Pork Fillet wrapped in Pancetta with Pommes Puree, Pommes Parmentier, Asparagus, Carrots, Peas and Apple Puree served with a Milk (yes!) sauce.

Tart Tatin (which I am going to do with my own recipe next time – get out of my head Heston!), Apple Sorbet (which was very recalcitrant) and Toffee Cream and Toffee Apples.
