Poached Egg, Bacon & Black Pudding Salad with Red Wine Sauce

Pan-fried Fillet of Trout with Chorizo Fricassee & Peas

(√Dairy, √Fish, √Gluten, √Pork)

 

Dark Chocolate Cappuccino Mousse with Chocolate Brownie

 (√Dairy, √Egg, √Gluten, √Vegetarian)

Served the Poached Egg with grilled Bacon, Black Pudding and crispy Potatoes with Mixed Leaves and Red Wine Sauce.

Cooked the Trout slowly in clarified Butter and finished with Lemon Juice. Served with Fricassee in a Potato ring that I roasted in Butter. Finished with Pea Puree, Asparagus and Shallot and Red Wine Dressing with Peas and Chorizo.

Served the Mousse in a cup but lightly whipped the Cream and poured it on and swirled a little. Dusted the Brownie with Icing Sugar and Cocoa Powder.
