Craig’s Notes

Cold cooked spiced Chicken with Chickpeas, a little bit of egg and flour to make a batter and then pan-fried. Garnish with Chickpea Puree and Tahini and leaves.

Poach the Salmon until just cooked. Mix with Mashed Potato, season well. Pane and deepfry. 3 per portion. Simple Lemon Butter Sauce.

Glaze the tart under the grill. Make sure the lemons are nice and bitter.
