Vegan Dinner Menu

Potato Ravioli stuffed with Garlic, Mushrooms and Leeks in a Cream of Leek Sauce and Crispy Leeks

Albóndigas con Picada de Almendra

Raspberry Rice Pudding Tart with Raspberry Sauce

 (√Gluten)

Made a mashed Potato without any fats or fluids. Seasoned and added Plain Flour. Left to cool. Sautéed Leeks and Garlic, added stock and Bechamel to create the Leek Sauce. Sautéed Mushrooms and added the Leek Sauce to bind and a few Breadcrumbs to thicken. Shaped and filled the Ravioli and fried. Served with braised Leek and crispy Leeks.

Served the Albóndigas with Rice and Peas, Romesco Sauce and finished with the Picada de Almendra.

Made a Pastry case and once cooked lined with hot Jam. Added Raspberries. Made the Rice Pudding and poured into the Tart. Left to cool. Served with Raspberry Sauce.
