Craig’s Notes

Well this starter went down a storm. Poched Salmon with Cream and a little Smoked Salmon, set in a mould topped with Smoked Salmon and Cucumber layered on the bottom. Pesto and Pesto Mayonnaise on the plate with Mixed Leaves, Dressing and Tarrogon Oil. 1 Leaf of Gelatin would have been enough for 2 Salmon portions.

Lovely Loin of Pork with my Garlic and Leek Stuffing. Very nice. Roast Potatoes, Sprouting Brocolli and Carrots. The Griddled Apples were a good idea. Filled with Bramley Apple Puree.

Served the poached Pears in a basic Tuille Basket with Hot Chocolate Sauce and Chantilly Cream. Nice Dessert. Make the Tuille earlier.
