Grilled Prawns with Chorizo, with crispy Bacon and Peas

Oven Roast Rack of Lamb with Corn Beef Hash and a Garlic and White Wine Sauce

Brioche Summer Fruit Pudding with Clotted Cream

 (√Dairy, √Eggs, √Gluten)

 

This was a really brilliant and delicious dish. The Prawns are wrapped in Pancetta and grilled just prior to service. They were served with a Minted Pea Puree, Croûtons, Pancetta, Chorizo and a delicious Pea Dressing.

The Lamb was incredible, from Jackson Brothers in Oban, the Corned Beef Hash was really tasty and unctuous – just too big, and the sauce was piquant to the correct level and sweetened with Redcurrant and a hint of Garlic.

Summer Pudding made with my own Brioche – stale of course. Making it with fresh Brioche wouldn’t work.These were the best I have made but still a little too big.
