Shakshuka – Egg Baked in rich Tomato & Red Pepper Sauce with Feta Cheese

Moroccan Spiced Lamb Cutlets with Char-grilled Courgettes, Cous Cous and Mint Chutney

Profiteroles with Hot Chocolate Fudge Sauce

Thick and rich Tomato Sauce in an oven proof dish with peas, ensure the sauce is hot. Crack in the Egg, sprinkle on the feta and finish in a hot oven. Serve with a large buttery slice of bread and bingo! Always very popular.

Needs a bit of refinement but tasty never the less. One of those dished where the Lamb is cooked until tender and spiced with Ras-el-Hanout. Cougettes and Cous Cous (this needed more work and more flavour – cinnamon, spice and body). Moroccan barbeque sauce with delicious.

Seventies here we come. Love them and so did our Guests.
