Craig’s Notes

This is a great dish and I have used it a few times with different fish but it was always intended to be for Mackerel. Quickly grilled Mackerel with slowly stewed Tomatoes, Pesto and deep fried Onions. Wonderful.

Who every thought of the Maryland dish must have been somewhere between genius and madness. Never the less, this receipe is from Glynn Purnell on BBC Good Food and if you have ever eaten at his restuarant, and I have, you will know you can trust him. Combined with the fact that he is from the midlands who are the most trustworthy people you could hope to find. Pan-fried spiced Guinea Fowl, with Sweetcorn Puree, fried Sweetcorn and deep fried Banana. Try it.

I love Panna Cotta for it’s simplistic elegance. Shame I forgot to put the sugar in. Tasted the test one and it seemed to be lacking something. This was 30 minutes before service so not good. I serve them in Tea Cups, so I added a little Chantilly Cream on top, drizzled with Honey, ground up a few of the Biscotti, sprinkled them on top of the Honey, dusted with Icing Sugar and browned with a blow torch. Quick thinking. Tasted delicious and our Guests’ enjoyed it to.
