Craig’s Notes

The Pasta was nice and thin. A little difficult to serve and present well. Need to add the Pesto to the Pasta liqor, finish the sauce, reduce and then add the hot pasta. Make sure it coats well. Garnished with elements of Pesto.

Haddock cooks well but has to be done to order. Haddock and Mashed Potato worked well. Sauce was disappointing. Watercress Sauce would have been better. Spinach washed out the colour and the flavour.

Summer Fruit puddings were ok. Made with ordinary bread. Should have used stale Brioche from Breakfast. Bread needs to be much thinner and soaked well in the Raspberry Sauce. Ensure they are packed well with Berries and pressed for at least 2 hours. Line the moulds with Clingfilm too.
